How much enthusiasm should I show during my interviews?

The right amount. There is no easy answer to this question because each job has its own needs, as does each construction employer. A good rule of thumb is that forced enthusiasm amounts to bait-and-switch. Unless you can sustain that level of energy on a daily basis, you're showing the construction interviewer who you aren't.
